Roka Akor Adds Daniel Hyatt as Bar Manager

Fancy steak/sushi/robata chain Roka Akor is still chugging along towards opening, and in addition to previously announced executive chef Roman Petry, they’ve added another all-star to the team: former Alembic bar manager Daniel Hyatt. Inside Scoop caught up with Hyatt to talk more about the big move, which he says will be “a very different sort of challenge, which is cool.” While many of his peers would have chosen brand ambassadorship after leaving a bar post, Hyatt says he’s a “craftsman” at heart, and would miss serving customers and spending the majority of his time in SF. Though the theme of the bar is Japanese, Hyatt’s cocktail program won’t be overly so, aside from a few infused shochus; he’s hoping to focus on an international whiskey selection, craft beer, and a steakhouse-inspired menu of drinks.
Meanwhile, construction continues in the former Zinnia and Scott Howard space, a famously cursed spot that the restaurant is hoping to overcome by literally changing the physical address from 500 Jackson to 810 Montgomery. Though they’d originally planned on opening this spring, the new ETA is early summer.
