Nobuo Fukuda Teaming Up with Roka Akor’s Chef, German Sega, for One-Night Omakase Event
Trusting diners who love grilled Japanese cuisine have a new event to look forward to this summer and that’s the one-night event that will bring Chef Nobuo Fukuda to Scottsdale’sRoka Akor to collaborate with its new executive chef, German Sega.
On July, 8 Fukuda and Sega will collaborate on a special omakase dinner — omakase being the Japanese term meaning “I’ll leave it to you” or, in the culinary case, leave the meal to the chef’s discretion. In addition to the chef’s whims, the menu will be subject to the constraints of ingredients available locally and seasonally.
The restaurant focuses on robatayaki, or Japanese-style grilled dishes as well as sushi and steaks. The main focal point of the posh restaurant is the charcoal robata grill.
Sega, the restaurant’s new executive chef, replaces Chef Jason Alford, who left Phoenix to help open a new Roka Akor location in Illinois. (There already are locations in Scottsdale, San Francisco, and Chicago.) Prior to gaining the new title, Sega served as Alford’s right-hand man and has been with the company for several years.
Sega trained at the Scottsdale Culinary Institute in the late ’90s, taking an internship gratis at the Arizona Wine Company, which eventually would lead to a job as wine steward for Peter Kasperski’s Spaghetti Western Productions (Cowboy Ciao and, later, Kazimierz World Wine Bar). From there, he went on to work at the now-defunct Seasaw, where he worked at sous chef under Chef Fukuda.
Since then, he’s been at several places, including Star Spangled Tavern and Baroque Lux lounge at DC Ranch, Luc’s Bistro, and 25 Degrees at City North. After 25 Degrees shuttered in 2010, he found himself a position as junior sous chef at Roka Akor, moving quickly into the executive sous chef position and, in May, as the executive chef.
The Night With Nobuo Dinner will take place on Monday, July 8, with two dinner seatings at 5:30 and 8 p.m. The omakase menu will cost $95 a person and reservations are required. Call 480-306-8800 or email Scottsdale@rokaakor.com.
