Muamer Habul – Director of Operations
Muamer Habul began his twenty-year career in the restaurant industry in the vibrant restaurant district of South Beach, Florida, working as food and beverage manager at Goldman Properties’ The Hotel. During his six years in Florida, Habul managed some of the most distinguished restaurants in the region, including Barton G Restaurant and Catering, Touch Restaurant and Lounge, and Wish Restaurant.
Prior to joining Roka Akor, Habul was involved with China Grill Management and the Morgans Hotel Group’s opening of the Mondrian and Asia de Cuba, a hotel and restaurant in Old Town Scottsdale. During his tenure with China Grill, Habul was responsible for overseeing food and beverage operations, such as in-room dining, catering events and banquets.
In 2008, Habul began his tenure with Roka Akor, working as general manager of the Scottsdale restaurant. During his two years as general manager, Roka Akor Scottsdale was named one of the Top 10 Sushi Restaurant in the country by Bon Appétit and Top 30 Sushi Restaurant in US by Travel + Leisure magazine. Seeking a new challenge, Habul went on to spearhead restaurant operations at the Arizona Biltmore, A Waldorf Astoria Resort in Phoenix. His primary role was improving services and revenues at the onsite restaurants, Frank & Alberts, The Wright Bar and Wright’s at the Biltmore, where he worked to transition the new concept into the restaurant. Following his successful career at the Biltmore, Habul returned to assume a larger management position with Roka Akor, and joined the restaurant’s management group, JNK Concepts, as the director of operations.
In his current role as director of operations, he oversees JNK Concepts’ major restaurant operations for each of Roka Akor’s four locations and Marigold Maison’s two locations. Habul attributes his accomplishments in the industry to the driving passion he feels for providing superior restaurant experiences and exciting cuisine, a passion which is invariantly reflected by his colleagues, from servers to executive chefs, at Roka Akor. Habul enjoys the intensity, work ethic, and fresh-focused robata cuisine of Roka Akor, where he is dedicated to promoting the message and unifying the culinary perspective of this stellar group of restaurants.
Constantly working to expand his culinary knowledge and experiences, Habul sources inspiration from his travels to South America, Europe, and across the United States, as well as from his experience growing up in Sarajevo. When he is not working, Habul enjoys cooking with his family, fishing, skiing and playing guitar. Habul lives in Scottsdale, Arizona, where JNK Concepts is headquartered.
